Dairy products from the border of the Lusatian Mountains and Bohemian Switzerland
The dairy on the border of the Lusatian Mountains and Bohemian Switzerland was founded in Varnsdorf during World War II in 1943. Since then, it has undergone many changes, but it is still a significant supplier of dairy products, as well as a significant employer in the region.
Fresh butter is produced in smaller batches using the classic method, cheeses are produced with a large proportion of manual work, which gives them unmistakable properties, especially taste and consistency. It is smoked exclusively with smoke from beech wood chips. It produces classic semi-hard cheeses Eidam, Gouda, Tolštejn – a mesh-shaped Emmental-type cheese, and steamed braids are made according to an ancient recipe from the North Caucasus. Fresh Pastevecký cheese was awarded in the competition for the best regional food in 2012.
Products from the dairy can be purchased directly from the company store, or from some bakeries and butchers. The products have also found their way into larger stores.
Fans of organic products will certainly be pleased that a large part of the products are made in this quality using organic milk and organic cream. In 2004, it was even the first dairy in the Czech Republic to be certified for the production of organic cheeses. They called them Mandava and they still produce them today, alongside a wide range of organic products that consistently win many awards.
It remains to add that the dairy was saved from bankruptcy by Polabské mlékárny a.s. and the dairy is now one of its establishments.
