Young spruce shoots are collected when the spruces are in bloom, usually in the first half of May. They contain a number of useful substances from vitamin C to some minerals and essential oils. In addition to its classic use as a sweetener for tea or for coughs and colds, it is used to prepare a special vinaigrette &#8211; a salad dressing or to pickle pearl onions in it, which are then a wonderful flavor addition to venison or venison p\u00e2t\u00e9s. Pine needle syrup also serves as the basis for homemade lemonades or roasted tea.   &nbsp;<\/p>\n<p>Everything is made directly in the U Fo\u0159ta kitchen, using the maximum amount of regional ingredients.
